Pectin, which is used as a thickener in food production, is naturally found in all fruits. In industrial production, it is obtained from citrus fruits, apples and quince.

Its effect in production is to improve the structure of the products it is used in, intensify the mouthfeel, increase the distribution and feel of the aroma and extend the shelf life of the product.

Pectin is also used as a filling agent in the food industry, in combination with sugar, due to its ability to form gel with sugar. Due to this feature, the most common usage areas are jam and marmalade production.
